Fall is my favorite time of year


 Hi All, Toni Holmes here from the Baker's Treat Mystery series. I don't know about you, but Fall is my favorite time of year. October is also Grandma Ruth's Birthday month. This means I'm baking up gluten-free pumpkin treats just for Grandma.

Here is one of her favorites that you can make at home:

Gluten-free Praline Pumpkin Treats


1 can (15 oz) pumpkin or 2 cups of mashed pumpkin
1 can evaporated milk
3 eggs
1 cup sugar
1 tablespoon pumpkin pie spice
1 box of gluten free yellow cake mix
1 1/2 cups chopped pecans
3/4 c butter or margarine, melted

Directions


Heat oven to 350 degrees F. Grease a 13x9x2 inch pan. In a medium bowl whisk pumpkin, milk eggs, sugar and spice until smooth. Pour into pan.
Sprinkle dry cake mix over the pumpkin mixture. Sprinkle with pecans. Pour melted butter evenly over the top and bake for 50-60 minutes or until a knife inserted in the center comes out clean. Serve warm or chilled. Store covered in the refrigerator.
