National Eat What You Want Day. And it's beautiful weather for a cookout here in Laguna Beach. So I thought it would be a great time to share one of my favorite recipes for an outdoor get-together. It's actually my cousin, Melinda's, recipe so I have to give her credit, but I'm pretty sure it's right out of our Grandma Tillie's recipe box.
Mel's Texas BBQ Mop Sauce
1/4 cup butter
2 garlic cloves, minced
1/4 cup minced onion
3 stalks of celery, chopped
1 cup of water
1 beef bouillion cube
1 cup ketchup
1/2 cup cider vinegar
3 tablespoons Worcestershire sauce
2 tablespoons spicy mustard
2 tablespoons honey
1 tablespoon paprika
2 teaspoons chili power
In a medium sauce pan melt the butter and then add the garlic, onion, and chopped celery. Saute them until they are lightly browned. Next add the water and the bouillion and stir until the cube is dissolved.
Add the rest of the ingredients and stir. Let simmer for 15 minutes. This makes about 3 cups of sauce. The sauce can be used on beef brisket, pulled pork, or whatever you like. We mostly use it as a mop sauce which means we brush on the surface of the meat like a basting sauce during cooking. My mouth is watering just thinking about it!
