A Recipe from Azalea's Kitchen

Azalea Berry from the best-selling Cat in the Stacks mysteries by Miranda James

Here's another recipe from Azalea Berry, Charlie's housekeeper. It's for Charlie's favorite, Lemon Icebox Pie

1 can Eagle Brand (condensed) milk
½ cup lemon juice
2 eggs, beaten by themselves

Mix the beaten eggs with the Eagle Brand (condensed) milk, then add the lemon juice and mix well.  (If you want to be completely certain the eggs are cooked, pop the mixture in the oven for a few minutes at 350 degrees.)  Then pour the mixture into the graham cracker crust.  Set into the icebox (that's a refrigerator for those who are too young to remember what an icebox is) until firm.

Note: if you’d like to make the mixture fluffier, add either cream cheese (2 to 4 ounces) or whipped cream (up to 10 ounces)

Graham Cracker Crust Recipe:
1 package graham crackers (about 1 2/3 cups crumbs)
1/4 cup granulated sugar
1/3 cup melted butter

Combine crumbs and sugar first, then add melted butter.  Press crumb mixture inside 9-inch pie plate and spread evenly over bottom and sides.  (Note: Azalea always makes her own pie crust, but if you don’t want to go to the trouble, Azalea says you can find some decent, ready-made pie crust at the grocery store, though she really doesn’t know why someone would go to all the trouble of making a pie and then use a pie crust made by somebody you don’t even know.)

(Note: Azalea does not recommend adding arsenic to the pie.)

  1. Sounds lovely. I must post some of my character Harry's recipes somewhere!

  2. It does sound very good! Especially without the arsenic!

  3. Wouldn't it be wonderful to sit down to a meal, at Charlie's home, prepared by Azalea and in the company of cat extraordinaire, Diesel? I can always dream!

  4. The pie sounds heavenly. Thanks for the recipe.

  5. It is my favorite pie, with cheesecake a close second!

  6. I'm reading this book now. I do so enjoy Mr. Charlie's point of view and his willingness to openly acknowledge his dislikes. He is a very likable character who lives with integrity. So glad you didn't write him as a muscular superman. I am enjoying this series!
