It’s summer in the Texas Hill Country. I have a book to write, but the cool river is calling my name. My significant other, Luke Griffin, is off today from his usual work as a Texas Game Warden, and he suggested we take tubes and go out on the river together for the first time.  That sounds like a sweet idea. After the river, we’ll be tired and hungry. Luke’s grilling some hamburgers, and I’m already thinking about my sweet tooth.
He’s picking me up in an hour. Ice cream is super easy, but I'm craving peach cobbler. With only four ingredients, I can have this cobbler thrown together and in the oven five short minutes later. Give it a try, and you’ll see what I mean. Easiest cobbler ever.

Easy Peach Cobbler

2 cans peach pie filling

1 package yellow cake mix

2 sticks butter

1 cup chopped nuts (if desired)

Spread pie filling on bottom of greased 9x13 pan. Sprinkle cake mix over top. Pour melted butter over cake mix. Sprinkle nuts on top. Bake for 45-50 minutes at 350 degrees. Serve with whipped cream or ice cream.
